HOW WE DO THINGS
Our goal is simple, use the finest ingredients we can source and make everything fresh in house to offer sustainable, delicious food & drinks to our guests.
With the opening of our new cafe in downtown Carrboro, we can now offer espresso using locally roasted beans, artisanal gelato that we make from scratch using local milk, teas from our in-house tea vendor, Sangha Tea, 4 taps of local craft beer & wines.
Our Neapolitan pizza is made the way it is made in Naples, Italy; using the very best ingredients and following a strict set of guidelines. We strictly adhere to the following guidelines:
use only the finest all natural ingredients
cooked in an all wood-fired oven at 900 F (no gas ovens allowed!)
cooked in under 2 minutes
all our mozzarella is Fior di Latte fresh mozzarella
all of our tomato sauce is made of only DOP San Marzano Tomatoes from Naples, Italy
we use only 00 Caputo flour from Naples in our dough and ferment our dough using only fresh yeast
we hand stretch and make all of our pizzas to order
all of our pizzas are the same size, about 11"
During our travels around the world, we had experienced eating from popup restaurants & eateries and how fresh and pure the food was. We wanted to bring this concept to our community. We bought a delivery van in 2014 and converted it into a mobile wood-fired pizzeria where we set up tables and lights nightly to create our pop up restaurant.
We were lucky to find a small space downtown last year and renovated it into a small cafe offering everything that wasn't able in the truck. With the truck parked next door, the experience we wanted to create is now complete. Our guests can order in the cafe and be served from the truck while enjoying everything on our patio or inside the cafe.
